Le Cantatrice Villane, by Fioravante is adorable. It's about a maestro in a town in Southern Italy and petty rivalries of his students. They all vie for parts in an opera he will stage for his students.

Don Bucefalo, a 19th Century version of the same story exists though I know nothing about it.

Tosca is a singer.
There is the Italian singer, Act 1 Rozenkavalier. Pretty easy ones. Oh Musetta teaches singing.

Rosina takes singing lessons. So does Susanna in Nozze from Don Basilio.
