Vesna, how about Radmila Bakocevic? She certainly sang Norma,  and I know she sang *some * Strauss...

These days: Elena Pankratova

As for multiple roles in one opera, many Wagnerian sopranos have done it, as has been mentioned.
At Bayreuth alone, Martha Moedl sang Gutrune, the Third Norn, Bruennhilde and Waltraute in GOETTERDAEMMERUNG. Astrid Varnay sang the first three at Bayreuth; did she sing Waltraute somewhere else?  Stuttgart, perhaps?
Another place to look is Mozart: for example, Dawn Upshaw at the Met sang Barbarina, Susanna and Cherubino.
With Puccini: who sang both Mimi and Musetta? Many people, and some both at the Met (Munsel, Scott, Sabeevna, Mario, Racette, Gueden, Fenn, Mitchell, Netrebko, Carson and more).
Who has sang both Liu and Turandot onstage? Many fewe ( Caballe and Arroyo come to mind) and no one has done both at the Met.Did anyone sing both Amneris and Aida at the Met
Did anyone sing both Amneris and Aida at the Met? Bampton, Resnik, Urmana.
No Met artist has done both Elisabetta and Eboli there.
