Just from a quick look in the Met Database

Ponselle, Carmen, Rachel in "La Juive", Margared in Le Roi d'Ys

Cossotto: Carmen, Dalila

Barbieri: Carmen

Simionato: Dalila

Freni: Marguerite, Juliette, Michaela

Pavarotti: Tonio in "la Fille du Regiment"

Bergonzi: Don Jose

But yeah, if an Italian singer is great, they probably could, even today, make a career out 
of only Italian roles, but would they really want to?
