On the Mac side, I recommend Audio HiJack Pro.
Also I use Griffin Radio Shark.

To do tracking Amadeus II is really super.

....and for those of you who are running a Mac, there's simple, little,
handy-dandy piece of FREEWARE called Wiretap which which captures any
sound that comes into your computer. (be sure and turn off all computer
noises while in use.)  It's deceptively easy to use, and it great for
live listening.

It has no timer, though. For that you would need Audio Hijack, which
does have a learning curve.
